  • A Work Horse Chef’s Knife (Gyutou) with an extended cutting edge and ability to use the rock and chop technique. Great for cutting vegetables and built to slice through your largest cuts of meat such as briskets, roasts, and hams with ease.
  • True 67 layer damascus clad steel (VG10 Cutting Edge with 66 Folded Damascus Clad Layers) and Rockwell Hardness of HRC 62 utilizing the San Mai Method. The softer outer layers protect the much harder cutting core allowing for an excellent edge without the fear of a brittle knife. You get the best of both worlds, performance and durability.
  • Katashi blades are authentic damascus and (unlike our competitors) never use etching or lasering to imitate true damascus. After our steel has been folded and forged, we apply our refined sandblasting technique to guarantee the damascus has a beautiful finish and is absolutely smooth to the touch.
  • Typhoon Damascus Pattern perfect for having this blade on display and impressing your guests.
  • Double Bevel Sharpened by Hand using the Traditional 3-Step Honbazuke Method (8 degree on each side)
  • Perfect as a Gift (Christmas, Weddings, Birthdays, Fathers Day, Mothers Day), for Home Cooks, Professional Chef’s, Culinary Students and more.

Inspired by thousands of years of traditional Japanese craftsmanship, our Katashi Gyutou has become among the most sought-after handmade blades within the Damascus community. Featuring high-quality steel from the heart of Japan, each blade is crafted to resist corrosion with enhanced durability to develop a blade that will stand the test of time. Completing a strenuous quality assurance process before being retested and honed, ensuring each piece meets the unmatchable quality of Katashi standards.

The Katashi Gyutou blade is 10 Inches long. The blade and handle are collectively treated with a satin finish to accentuate the naturally stunning aesthetics of its unparalleled Japanese tradition. The handle is secured with a non-slip surface to emphasize safety, after being carefully sized for comfort and ideal placement that you will notice.

Pretty, Sharp, Heavy, No Regrets

I've owned this knife for a while now, so let me tell you about it. It's heavy! It's well balanced though so if you don't mind a heavy knife, it's kind of nice. The pinch-grip feels really good in your hand. Without a "ricasso" or heel, it takes time to find the blades end. I spent many months learning where the blade ends so I don't slam my knuckles. It's very pretty!!! It came very sharp and stayed sharp for months of hard, everyday use!!! It's a unique piece of art and I do not regret buying it.

Too sharp for amateurs but great item

The knife is great, handle is comfortable. Works great for veges and quarter inch thick sashimi. My go to knife but it’s too sharp and poked me twice when using as utility for opening boxes etc. yes I know it’s as advertised but injury prone. Hence I cut one star. Sometimes you just can’t win all the battles.

Beautiful Knife!

I was a little sceptical when I first saw a post about this knife on facebook. Normally stuff on there is pretty crap quality, but the knife just looked so great on the site that I decided to take a chance. Luckily I was more than blown away when I got mine. It comes in an awesome wood box and the knife itself looks absolutely amazing. Not to mention this thing is incredibly sharp. I don't use it for every single meal I cook, but I've had it for a couple weeks now and it seems like it's just as sharp as the day I got it.

Amazing gift

I got this for my dad as a birthday gift. He collects knives, and doesn't mind cooking with them either. The packaging was lovely including the stunning wood box the knife comes in. He claims it's one of the sharpest knives he's ever worked with.

A nice update

My husband and I have a fully equipped kitchen and we love to cook so we were excited to get this knife! Our little collection needed updating. I love the feel of the knife, it's balanced with a little heft but it doesn't tire out my hand to use it. It's got a beautiful design too and fantastic wooden box packaging. Damascus blade is of a very high quality, you can easily see it. The best feature of this knife of course is it's sharpness. It cuts through everything like through a soft stick of butter. My husband and I definitely think this is the best knife we own, we are pretty impressed! Well worth the money for sure!
